Salmon Teriyaki Bowl
Easy weeknight salmon teriyaki bowl!
Another recipe I would make all the time while we lived in Charleston! A quick and easy meat free dinner! I hope you guys enjoy and feel free to tag me in your creations on insta if you make it at home!
Ingredients
salmon filet
white rice (I sometimes sub cauliflower rice here for a low carb option)
broccoli
veri veri teriyaki sauce
room temperature egg
1 tbsp sesame oil
Optional: avocado / sesame seeds
WHAT TO DO:
Place your salmon in a baking dish and coat with teriyaki sauce. Let this sit while you prep the rest of your ingredients and steps. For best taste, marinate your salmon the in the teriyaki the night before, but let’s be honest we don’t always have the time for that.
Cut & steam your broccoli and place it to the side. If you have an air fryer I like to use this for the broccoli rather than steaming from time to time to add a light crunch.
Cook your white rice, once ready place in your bowl.
Add your broccoli on top of rice
Get a small pot up to a boil with salt. Once ready place your room temp egg in the water and cook for 4-5 minutes. While your soft boiled egg is beginning to cook grab a pan & heat your sesame oil.
On a med-high heat place your salmon skin-side down and let cook 6 to 8 minutes. Flip to the other side and cook an additional 4 to 6 minutes longer, or until the entirety of the fish is cooked through.
Place the salmon on your bed of rice & broccoli.
Run the soft boiled egg under cool water, peel shell & place in your bowl. Gently cut the egg in half.
Lightly drizzle your teriyaki over the bowl
Optional: top your bowl with sliced avocado & sesame seeds!
