Honey Sriracha Tofu Bowl
Another recipe I would make all the time while we lived in Charleston! A quick and easy meat free dinner! I hope you guys enjoy and feel free to tag me in your creations on insta if you make it at home!
Ingredients
Sriracha tofu (I purchase at Trader Joe’s- plain tofu is fine as well! make sure to use firm or extra firm)
White rice (I sometimes sub cauliflower rice here for a low carb option)
Cilantro
Red cabbage
1 tbsp sriracha
1 tbsp honey
Optional: avocado / sesame seeds
WHAT TO DO:
Cut your sriracha tofu into cubes. To cook the tofu I use my air fryer and cook for 15 min. You can easily pan fry these as well with a little bit of oil!
Add a small amount of oil to a frying pan (if you have sesame oil this is a great time to use it!) Add your cooked rice to the pan. I used frozen cauliflower rice for this recipe and cooked it right in my pan.
Chop up about 1/4 cup cilantro, sprinkle your desired amount of cilantro into your rice while it is heating. Add salt and pepper
Squeeze 1 small lime into your rice, mix until flavors have cooked in. Turn the heat off and set aside.
Chop up about 1/3 cup red cabbage, I transfer my rice into the bowls so my frying pan has opened up again. Lightly sautee your cabbage until it is no longer very firm, this should only take a few minutes. When ready add on top of your rice.
In a small mixing bowl add your honey and sriracha, mix together. Adjust to the amount needed to top your bowl.
Add your tofu when ready to the bowl
Slice up your avocado + sprinkle a little extra cilantro and sesame seeds. Lastly, drizzle your honey sriracha on top and enjoy!
